Grilled Veggie & Basil Mayo Wrap
Description
This is a delicious wrap. You can use any type of grilled vegetable. You pick and choose. Try different combinations. If you want, add grilled chicken.

2 Tortillas
1 grilled red pepper, thinly sliced
1 grilled zucchini, thinly sliced
1 grilled small eggplant, thinly sliced
6 grilled small mushroom, thinly sliced
1/2 Cup Mayonnaise
2 tsps white wine vinegar
1 clove garlic
1/4 Cup basil leaves
salt and pepper, to taste
1/2 cup Fontina, grated
Preparation
In your food processor blend mayo, vinegar, garlic, and basil. When it is smooth season with salt and pepper.
Take one of the tortillas and spread with basil mayo. Put one to two layers of the grilled vegetables over the tortilla. Sprinkle with 1/4 cup of cheese. Tightly roll up the tortilla and secure with a toothpick. Repeat with 2nd tortilla. Grill a minute (or less) per side to get the grill marks. Slice into 4 pieces.
