Simply Fresh Guacamole
Description
No guacamole is as good as that made from scratch with fresh ingredients. This recipe is so yummy you'd better plan to multiply your ingredients and make a triple batch!
Beyond a dip for chips, it is excellent as a spread for wraps or sandwiches, a side dish or garnish for a breakfast omelet or tortilla, or thinned out with a little avocado oil and coconut milk pureed into a delicious and nutritious salad dressing or cold soup.

3 Fresh semi-firm ripe medium avocados, peeled and cubed
2 Plum tomatoes, core and seeds removed, diced
1 Tbs White onion, minced
1 Jalapeno pepper, seeded and finely minced
2 cloves fresh garlic, minced
1/4 Lime, juiced
1/8 tsp Cumin, ground
1/8 tsp Coriandar, ground
Sea salt, to taste
White freshly ground pepper, to taste
Chili powder, to taste (opt.)
1 cup Fresh cilantro leaves, chopped
Preparation
Mash about 2/3 of the avocado into a thick paste, then roughly mash the rest leaving the mixture lumpy. Stir in about 1/2 of the lime juice, then gently blend in the spices, garlic, and onion taking care not to "whip" the avocado mixture. Test taste, adding a little more lime juice, salt & pepper to your liking. You may also add more heat with additional jalapeno pepper, cayenne pepper, or a few drops of hot sauce. Finally, put into a serving dish and garnish with the diced tomatoes and fresh cilantro leaves. The serving amount varies according to how you plan on consuming it, so for chips or as a soup you'll want to at least double the recipe for more than 3 people.
If using as a sandwich spread, you may prefer to add a Tablespoon of Vegenaise, Nasoya Nayonaise, or mayonnaise to the mixture.
Note: If you are low on your stock of avocados and want to increase your servings, you may substitute some mashed firm tofu unless you are avoiding soy in your diet. In that case, you may need to increase your spices to compensate for the loss of avocado flavor. Tofu has virtually no flavor; it takes on the other flavors it is blended with. If making a dressing, I recommend you add a little olive or avocado oil to the mix and puree in a blender on high for 2-3 seconds.
