Halftime Chili Con Carne

Halftime of the Super Bowl is one of my favorite times of the year -- not because of the musical entertainment, but for the food! This halftime chili con carne is a staple at all of our Super Bowl parties and will be a sure hit if you decide to make this up for the big game! This chili is also a great leftover dish that you can enjoy for the entire week.

I use Molson Canadian for the beer in this dish, but any good lager beer will do. We have also made this chili with Sleeman's Original Draft, which turned out quite well. The beer does add quite a bit of flavour to this chili.

Two 19oz cans Red kidney beans
2 lbs lean ground beef
1 large onion
1 green pepper
1/2 cup celery
1 tbsp salt
1/2 cup Sugar
2 cups corn
4 cloves garlic
3 tbsp chili powder
1 tbsp dry mustard
2 bottles Beer (I use Molson Canadian)
Two 6oz cans tomato paste

Preparation

- To prep: you'll want to slice your celery, onion and green pepper up into small pieces.

- In a large skillet, brown off your ground beef with your sliced onion pieces. Drain the fat when complete.

- Add salt, sugar, chili powder, garlic and mustard to the beef. Add one of your bottles of beer. Cover and let simmer for 30 minutes.

- Add your tomato paste, beans, celery, peppers and corn. Let this simmer for another 30 minutes.

- Take a sip of beer. You're almost done! :)

- Add the remaining bottle of beer right when the chili is about finished. Serve with crusty rolls! This will be a hit at your halftime party. Enjoy!

Looks like a winner! I would personally kick it up a bit by adding some jalapeƱos or some red chili paste. The addition of the beer is definitely a great way to add some additional depth. We have our menu planned for the big game already but I am going to try this one out next year!!
