Hamburger and Rice Casserole
Description
This is a recipe that is an old family favorite. I am not sure where it originally came from, but it has been altered several times and is very versatile. You can add whatever other ingredients you want to make it to your liking. It is fast and reasonably cheap to make as well. My Mom used to make this for our family growing up and I always loved it. It is even better the next day!

1 pound of ground beef
3 cups of instant white rice
1 can of cream of mushroom soup
1 cup of milk
1 1/2 cups of water
1 cup of mushrooms, fresh or canned
½ chopped onion, or 1 tbsp. minced onion
2 tbsp. Worchestire sauce
Salt and pepper to taste
Optional:
Sour cream
1 can of peas
Soy sauce
1 package of Chow Mein noodles
Preparation
Start by sweating your onions in a large deep pot with a small amount of olive oil. After a few minutes, add your mushrooms. Cook the onions until they are almost see through and tender, and the mushrooms should be tender as well. If you use minced onion just cook your mushrooms by themselves with a little oil. Add your hamburger and brown (add minced onion at this time). Cook the hamburger thoroughly and break up with your spoon as you stir.
Add Worcestershire sauce and salt and pepper to taste. Stir in cream of mushroom soup, water and milk. Mix everything well and allow the mixture to come to a boil. Once it starts boiling, immediately add rice and mix together until all grains are fully immersed in soup mix. Remove the pot from the heat and cover. Let sit for about 7 minutes, or time according to your rice package.
After time has elapsed stir one more time and serve. If you like you can add a can of peas and mix through, or serve on the side. We serve ours with a dollop of sour cream, a splash of soy sauce, and top it off with crunchy chow mein noodles. Enjoy!
