Hash Brown Casserole

Cheesy hash brown casserole is a lifesaver when it comes to simple, delicious, side dishes. Not only is it easy to prepare, it also makes enough to feed a small army (Ok, I may be exaggerating a little, but you get my point). Serve it as a side dish, or even toss in some ham and turn it into a whole meal!

add to shopping list Ingredients

2 lbs. frozen hash brown potatoes
1 pkg. (8 oz) cream cheese
1 stick butter
1 can cream of mushroom soup
1 can milk
1/2 white onion, chopped
salt and pepper to taste
shredded cheddar cheese

Preparation

Mix all ingredients together in a large bowl. Pour into a 13 x 9 glass pan (spray with nonstick spray first). Bake at 325 degrees for 90 minutes. After about 15 minutes, give everything a quick stir and then place back in oven for remainder of time. Take out of the oven and garnish with shredded cheddar cheese. Yummy!

Quick recipe? Does the author's brain go blank during the 90 minutes of bake time? This ain't 30 minutes or less! I'm sure it's quite tasty though. I'll be making it this weekend for brunch.
