Healthy Low Fat Eggplant Parmesan
Description
A good friend knew I was trying to eat healthy low carb so when she found this little cookbook at garage sale. She bought it and gave it to me and this was my favorite recipe in the book.

1 med Eggplant
1/4C mayo
1/4C italian breadcrumbs
1/4C parmesan
Preparation
Slice eggplant into approx. 3/4 inch slices,spread each slice on both sides with thin layer of mayo then press each slice on both sides into breadcrumbs & parmesan mixture. Place on cookie sheet,bake 350 x aprox 12 min on each side,top with mozzarella cheese and Marinera sauce.I have used olive oil in place of mayo. Serve on top of angel hair pasta and salad as a side or asparagus. Delicious!
