Herb & Lemon Butter Tilapia
Description
I love to cook fish because it is so versatile and usually simple to make. This is one of my Mom’s creations that helped instill my love of seafood at a young age. Creamy, lemony, herb butter coats the Tilapia and gives it great flavor. You could substitute any fish you like: salmon, halibut, etc. Serve it with some fresh steamed vegetables and you have a quick, healthy, meal!

6 Tilapia filets (cleaned and patted dry)
¼ cup butter (melted)
½ teaspoon basil
½ teaspoon chopped rosemary
½ teaspoon salt
2 tablespoons lemon juice
Preparation
Preheat your oven to 350 degrees. Grease a shallow baking dish, and place fish filets on the bottom. In a bowl, mix all your herbs, butter and lemon juice. Pour over the top of your fish and cover with foil. Bake for about 20-25 minutes. Serve over rice, pasta, or alone with some sides. Delicious!

The delicate flavor of this fish is such a favorite of mine. Butter and lemon is all you need, but these herbs will lend a great touch.
