Homemade Potato Chips

Also known as "Raw Fries" these delightful homemade potato chips are perfect with buffalo wings or for tailgating or snacking on during a game!

Preparation

In a deep fryer or dutch oven, place vegetable oil about 2-3 inches deep. Heat oil to 365°.

Cut potatoes in half lengthwise. Using a mandoline slicer, slice the potatoes very thinly. Place potato slices on paper towels and dry.

Fry the slices in the oil in small batches so that the potatoes are not crowded. When potatoes begin to curl and brown on edge, use tongs to flip them over and allow them to continue to cook for 30 seconds to 1 minute on opposite side. (Bubbles will begin to subside.)

Remove potatoes from oil and drain on a wire rack placed over a paper towel lined baking sheet. Salt potatoes while still warm and serve.

Choose medium size Yukon Gold potatoes for the best taste and texture. If you can't find Yukon Gold potatoes then medium to small Russet Potatoes will work.

If you love the Terra Chips sold in stores, combine your potatoes with thin slices of beets, sweet potatoes, blue potatoes, or other root veggies for a colorful and flavorful display.

Try flavored salts for more variety. Garlic salts are wonderful on chips but don't stop there. Take a look at the incredible varieties produced by Fusion Salt!

Look At You! Homemade potato chips couldn't be easier. I have been thinking of buying a deep fryer. I did have one and then gave it away. In fact, I just might use my Dutch Oven and the Chinese strainer and make them stovetop.

This is one of my favorite treats! I usually have a big bowl of Yukon Gold potatoes in the kitchen and just slice some up and fry them for a supper side dish. :) Couldn't be easier and I actually don't care for the taste of packaged chips that much anymore!
