Homemade Tomato Basil Soup
Description
Basic use for all those rampant tomatoes, a good hearty and very versatile soup for all occasions

4 Lg Whole Tomatoes
1/4 C Fresh Basil (or 1 Tsp dried) diced small
4 Tbsp butter
4 Tbsp Good Olive Oil
Alternative 1/2 C. Heavy Cream for cream soup version
Preparation
Blanch and peel tomatoes, cut into small pieces.
Heat Olive Oil in Sauce Pan
Add tomatoes and chopped basil to saucepan and heat until they are mushy and break apart easily (about 5 min.),
Pour into blender or food processor and blend until smooth
Return to original sauce pan and heat on medium heat,
Season to taste with salt and pepper
Add butter and stir to melt.
Remove from heat.
Additions: for cream soup, stir in 1/2 Cup Heavy Cream to cooled soup.
Serve Hot, Warm, Cool or Cold
Topping Choices: Minced Basil, Sour Cream, Soft Cheese or even baked tortilla strips.
Serves four and keeps well in refrigerator.
