Indian Spice Cookies
Description
A soft and chewy spice cookie based on the complex flavors of Garam Masala, an Indian spice blend used in many dishes. This has a complex flavor profile dominated by cinnamon and ginger but finishing with hints of cardamom.

1 cup Butter (softened)
1 cup brown sugar firmly packed
1/2 cup granulated sugar
2 eggs
2 tsp. vanilla
2 1/4 tsp. garam masala
1 tsp. baking soda
1/4 tsp. salt
2 1/2 cups all-purpose flour
1/2 to 1 cup chopped walnuts (optional)
Preparation
Preheat oven to 350° F. Cream together the butter, brown sugar and granulated sugar. Mix in two eggs and vanilla until incorporated. Mix in remaining ingredients. Drop by rounded teaspoons onto cookie sheet lined with parchment or silicone mat. Bake for 10-12 minutes. Let cool on cookie sheet for 5 minutes then remove with spatula to wire rack to cool completely. Store in airtight container to retain softness.
