Italian Meatless Meatballs
Description
This dish was originally given to me by my Italian mother in law as a meatless meatball by using breadcrumbs rather than meat. I took it a step further and added in some bulgar which gave it a meatier texture and was a great healthy substitute for the meat. It has also been 100% Italian Tasted and Approved!

1 cup breadcrumbs
1/3 cup Cooked bulgar
3 cloves chopped garlic
1 Handful chopped fresh basil
1 egg
3 TBLE Olive Oil
1/4 cup grated Romano cheese
Preparation
1. In large bowl, mix all ingredients until moist.
2. Form into meatball size balls.
3. Heat 2 or 3 swirls (about 2-3 Tablespoons) oil in frying pan over medium heat.
4. When hot, add meatballs and gently move around for about 3 minutes so no burning occurs.
5. Remove from pan and place in lightly oiled baking dish.
6. Bake at 360 for 30 minutes.
7. Serve warm with sauce on the side.
8. Enjoy!
Tip #1: The bulgar takes 15 minutes to prepare and is very easy. Don't let this deter you from adding it in. In fact, when I created this dish I used left over bulgar that was in the fridge.
Tip #2: Do not try to cook these in sauce because the breadcrumbs will absorb the sauce and get mushy. Serve them on the side.
Tip #3: Use this as a stand alone dish with sauce on the side or use it along with a dish of pasta.
Tip #4: Do not tell people it has bulgar in it unless they know what it is. Even my family did not realize they were eating healthy meatballs!

Now I can make meatballs and my husband (who doesn't eat meat), can enjoy them, too. Outstanding idea.
Sounds delicious. Excellent recipe especially for those who need to watch their cholesterol nowdays. I bet you can even add some garlic and parsley.

It's called a meatball b/c that is how it translates. In Italian it is "polpeti" (I believe that is how it is spelled) which can also be used as a term for a breaded meatball. Since meat was not as common, my Mother in law tells of times when in her childhood they used just bread (and a little beef if they had any). So I took the idea and ran with it.
I'm glad everyone like them - or at least the idea of it!
