Italian Potatoes and Sausage
Description
This is a family favorite. The flavors are fantastic and so easy to make.

1 pound of hot or sweet sausage. Your choice
5 red potatoes with skins left on.
1 large red onion
5 Cloves of garlic minced
1/8 cup extra virigin olive oil
1 teaspoon of dried basil
1 teaspoon of dried oregano
Preparation
Use sausage in the casing.
slice sausage in 1/2 inch slices.
chop onion and mince garlic.
wash potatoes leaving skin on.
heat a large frying pan on med heat.
when hot add the sausage and cook for 5 minutes, turning several times.
While sausage is cooking cut potatoes length wise then slice across.
Add the onion to the sausage and cook for 2 minutes.
add the potatoes, basil and oregano cook for about 15 minutes. potatoes should be fork tender and turning golden brown.
5 minutes before the potatoes are done add the minced garlic, careful not to burn it.
Serve hot with a salad and crusty bread.
You have a full meal.
I use turkey sausage now and it has a very good flavor and allot less calories and fat.
