4 Boneless, Skinless Chicken Breast Halves
3 Large Eggs, Beaten
1 c. Parmesan Cheese
1 c. Fine Dry Italian Bread Crumbs
1/4 c. Italian Salad Dressing
1/4 c. Butter
Preparation
Preheat oven to 350 degrees. Wash chicken and pat dry. Dip in eggs. Combine cheese and bread crumbs and coat chicken thoroughly. Place on greased baking sheet and drizzle with salad dressing. Place pats of butter on each piece of chicken and bake for 45 minutes.

Instead of baking, fry these "cotolette" in a smallish amount of oil in a nonostick pan. traditional "cotolette" are either veal or pork, but chicken ones are getting more and more popular. They are rarely done with butter, most prefer oil, and never baked. If you opt for baking, remove all fats and just bake in a nonstick pan or over parchment.
