This vegetarian sandwich is punched with flavor! Enjoy it in the summer when all the ingredients are fresh.
add to shopping list Ingredients
pitted, kalamata olives
good quality, extra-virgin olive oil
goat cheese
carrots, julienned
cucumbers, sliced with some skin left unpeeled
bread slices (i'm partial to white, but whole wheat works too)
Preparation
1. for olive spread:
in a food processor, combine kalamata olives and olive oil until smooth.
2. to assemble sandwich:
- spread approximately 1 teaspoon olive spread on a slice of bread. do the same with goat cheese on another slice.
- layer with cucumber slices and carrots.
3. devour and have good times! (this is a great summer sandwich)
