Katie's Edamole
Description
This Edamole is a fun take on traditional Guacomole. Even though avocadoes are healthy in moderation, adding edamame bulks up the traditional dip, adding lots of fiber and protein with very little fat. The result is a delicious and addicting dip that the whole family can enjoy!

1/2 cup edamame, shelled and thawed (if using frozen)
1 medium or large avocado
1 t Olive Oil
1/2 lemon, juiced
1/4 t salt
1/4 t sriracha
1 tomato, seeded and diced
1/4 white onion, diced
Preparation
First thaw the edamamae and shell if necessary (it would probably be easier to buy pre shelled). Blend in food processor. You can either add the remaining 5 ingredients to the food processor, or remove the edamame and mash together with avocado by hand. This will depend on how chunky or smooth you would like the edamole to be. Once these ingredients are mashed together, add the tomato and onion and stir to thorougly combine. Serve with tortilla chips.
