Kelewele: Ghanaian Plantains

This hot fried plantain dish is a traditional Ghanaian accompaniment to red-red, a spicy black eyed pea stew, but it would go with any bean dish.

Preparation

Slice the plantains into one-inch thick discs.
Mix all the spices and water together in a bowl. Add the plantains and stir to coat completely.
In a skillet over medium high heat, fry the plantains until they're crispy and brown - about 5 minutes on each side.
