Before my Mom was too busy with work and other activities, she used to have more time to cook. She would make this amazing lasagna from scratch, and I remember the incredible smell filling the entire house. This recipe became a staple around Christmas because it was so warm and comforting, not to mention delicious. Not everyone has time to make their own sauce, so you could substitute a jarred one. However, if you find yourself with a lazy Sunday afternoon and you want a recipe that will knock your socks off, I suggest you follow the recipe and make the sauce from scratch. You will never want to go back to jarred again!
Sauce:
½ Bermuda onion, chopped
½ green pepper, chopped finely
3 cans of tomato sauce
1 small can of tomato paste
½ teaspoon marjoram
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon pepper
2 bay leaves
¾ teaspoon of thyme
1 ½ teaspoon oregano
1 ½ teaspoon sweet basil
½ teaspoon sage
1 pound ground beef
Remaining ingredients:
1 large package of lasagna noodles
3 cups of cottage cheese
2 cups grated mozzarella cheese
½ cup grated Parmesan cheese
Sauce:
In a large pot, sauté your onion in butter until soft. Add green pepper and allow to cook for 1 minute. Add tomato sauce and tomato paste. Mix well. Add all of your spices and bay leaves. Allow to simmer over medium/low heat for about 10 minutes. Remove bay leaves and discard. In a separate pan, brown ground beef until fully cooked. Drain grease from pan. Once sauce is done simmering, add in your ground beef and stir well. Set aside.
Lasagna:
Cook lasagna noodles according to package, remove from water when they are al dente (firm to the tooth). Drain well and spread each noodle out on foil to cool. In a large, deep baking pan, spread a layer of sauce. Grease the sides of the pan. Now add one layer of noodles, top with cottage cheese, sauce, and mozzarella. Continue layering until pan is full. Top layer should end with sauce and the rest of the mozzarella cheese. Then sprinkle with Parmesan. Cover pan with foil and bake for 30 minutes. Cheese should be melted and sauce should be bubbly. Remove and allow to sit for at least 15 minutes to set up. Serve with a fresh salad and some garlic bread. Bellisima!
