These lemon bars are my Mother’s easy recipe. Every time she would make these for a family gathering, they would not last long! Chewy, tart, and sweet at the same time, they are sure to please your palate.
1st Layer:
2 cups flour
½ cup powdered sugar
¾ cup melted butter
2nd layer:
2 cups sugar
4 tablespoons flour
1 tablespoon baking powder
6 tablespoons lemon juice
3 eggs (beaten)
Mix the first group of ingredients and pat firmly into a 9 ½ x 13 pan (this should be a crumbly mixture). Bake at 350 degrees for 12-20 minutes. Take out when it starts turning brown in color.
While this is baking: Mix the 2nd group of ingredients. Once the shell is baked and has cooled for a short time, pour this mixture on top. Bake at 350 degrees for 25 minutes. Remove from oven and sprinkle with powdered sugar.
Cut away from the side of the pan with a moistened knife immediately after removing from oven. When cool, cut into bars. Enjoy!
