Bright with the flavor of lemon, this side dish made with Orzo, a classic Greek pasta, is very simple to make.
1 cup orzo
2 Tablespoons shallots - minced
1 Tablespoon lemon zest
1 Tablespoon Lemon Juice
2 Tablespoons Olive Oil
To taste Salt & Pepper
Cook orzo in boiling, salted water until al dente. Toss with remaining ingredients and serve immediately.
