Linguine with Baby Spinach and Almonds
Description
This is very reminiscent of pesto and so good even the youngest of my kids loved it! Simple and delicious. This doubles and beyond very easily.
add to shopping list Ingredients
1/4 pound linguine - cooked al dente - drained
1 cup baby spinach leaves - whole
1/2 teaspoon dried basil leaves
1/2 clove garlic - minced
1 Tablespoon Olive Oil
1 Tablespoon sliced almonds
Preparation
Toss together until heated through and spinach is slightly wilted. Salt to taste.

What a great tasting and simple dinner. I used lemon pepper linguine and that marvelous lemon flavor was just the thing along with the mild baby spinach, garlic and the extra virgin olive oil drizzle. I must say that the almond texture was an inspired inclusion. Add to that the fact that it's fasted than a run to McDonald's and you have a real home run.
