This is a version of my Great Aunt Cindi's recipe. I love beef potpie, but don't always have the time to make it. This quick casserole has all the same flavors but is super easy to prepare. Toss in whatever ingredients you prefer and create your own recipe. This casserole is a fun way to get kids to eat their veggies too. They hide under the biscuits and they hardly notice them.

I made up this recipe one night when I needed something extremely easy and fast. Most of the ingredients are store bought, but they still taste really good. To give it a homemade touch, add some of your own ideas. Substitute corn tortillas if you prefer a more authentic taste. Fiesta time!

This is one of my all-time favorite meals! I remember the first time my Aunt Lisa brought it to a family birthday party...I was about eight years old, and I thought it was the most delicious thing I had ever tasted. Since then, it has become a family staple. My mom and I have both made it countless times. It is the perfect side dish to take to a picnic or barbeque, but it's also hearty enough to stand on its own. Although I make the dish year round, it always hits the spot during the chilly winter months! Serve it with some tortilla chips and sliced avocado or some fresh cornbread...either way, it's delicious.

I love using Asian inspired ingredients when preparing a steak. The salty/sweetness really takes the flavor of the meat to a whole new level. Flank steak seems to work best because it is a thinner cut of meat, but still has a lot of juiciness to it so it won't be dry. Try this marinade the next time you are in the mood for something a little different, and I am sure you will love it as much as I do.

Nothing is better than a big, juicy steak straight off the grill. I am a believer that steak should be lightly seasoned, for the most part. However, I love this recipe with the lemon-thyme butter on top of the steak. It is such a refreshing change of pace from the normal steak seasonings and sauces. Serve it with a baked potato and some fresh vegetables, and you have a well balanced meal.

This is a recipe that is an old family favorite. I am not sure where it originally came from, but it has been altered several times and is very versatile. You can add whatever other ingredients you want to make it to your liking. It is fast and reasonably cheap to make as well. My Mom used to make this for our family growing up and I always loved it. It is even better the next day!

My mother made this often when I was growing up and it was a staple in my house when my children were young. My Great Grandmother was a whiz in the kitchen. We are so lucky that she wrote down some of her recipes before she passed on. Now we all still get to enjoy these recipes whenever we can. Although I suspect that they would still taste better if she made them. Here is her awesome meatball recipe. Maybe you can pass this recipe down in your family as well.

Before my Mom was too busy with work and other activities, she used to have more time to cook. She would make this amazing lasagna from scratch, and I remember the incredible smell filling the entire house. This recipe became a staple around Christmas because it was so warm and comforting, not to mention delicious. Not everyone has time to make their own sauce, so you could substitute a jarred one. However, if you find yourself with a lazy Sunday afternoon and you want a recipe that will knock your socks off, I suggest you follow the recipe and make the sauce from scratch. You will never want to go back to jarred again!

One of my favorite supermarket shortcuts, pre-cooked frozen meatballs, make a star appearance in this super-easy and savory stew. Kids love meatballs, so I bet this will be a new favorite at your house. This is an old family recipe that is simple and delicious. I like to top mine off with gravy, but you can serve it plain, or add good ol' ketchup if you like. Serve it with mashed potatoes and a veggie and you have a filling meal that everyone will love. The next day make cold meat loaf sandwiches with the leftovers. Mmm, my favorite!

A friend of mine gave me the original recipe for this a few years ago and they were the best sloppy joes I have ever had. I have adapted the recipe a bit over time, but they are still as delicious as when I first tried them. My family is so crazy about them that my son, who is grown and on his own, asks me to make and freeze them for him to take home on his next visit.

In spite of the fact that legend says this recipe was created by Chinese immigrants in San Fransisco, it is not truly Chinese. Rather I think it is a great example of the good 'ole American standby skillet supper or casserole. It's tasty and super-easy to make. I like to serve it with a simple garden salad with creamy Italian dressing (something about that flavor combination!).
