My Step-Mom, Cora, makes the best Arroz con pollo around…. unfortunately she won't give me the recipe! So I made my own, and tried to make it as similar as possible. Arroz con Pollo is a great meal to make when you have a large group to feed as it is really simple to make. Throw in some vegetables or seasonings that you like, or just make it as is. It will surely become one of your favorites too!

I love this recipe because it can be served in so many different ways. Keep it in its original form, and serve it over some leafy greens with a lemon vinaigrette. Add some Italian herbs and serve it over pasta with marinara sauce, or Alfredo sauce. There are so many ways you can play with it. No matter what you do, your stomach will be satisfied!

Here's an inventive take on jerk chicken. The Pick-a-peppa sauce gives it some spice, while the pineapple gives it some sweetness. Top it with some Monterrey jack cheese, for a little creaminess as well. You could even make this into a sandwich!

My boyfriend would eat this everyday if I would let him. It doesn't take much time and makes a ton, so it is great for leftovers as well. I use fresh broccoli but you could use frozen broccoli to save time. This will definitely become one of your famiy's favorites. Even kids will love it.

Here is a simple meal that my Great Grandma used to make. It is extremely quick and easy to make, but it is a nice change from the normal rice casseroles since she uses wild rice. I added a few of my favorite additions to make it more my taste. You could also switch it up with some turkey, beef, or any other protein you like. Then toss in some of your favorite veggies as well. Dinner is ready in a flash!

I adapted this recipe from one that I saw on a cooking show. They were grilling the chicken, but I didn't have a grill, so I figured sautéing the chicken would work just as well. It is relatively easy to make and pairs well with potatoes, pasta, or rice, and any vegetable. This recipe is actually pretty healthy as well. The rosemary and lemon give it a refreshing taste that is sure to please.

Great Grandma, Lucille, used to make these Asian inspired chicken wings. Most of my family cannot handle very spicy food, so these wings were a great alternative to the hot variety. My favorite recipe of all time. It initally was my Mother's and she made a version very similar to this. There were some items my sister didn't like so she added some of her own touches. Years later I was out of some ingredients so I substituted a few things and voila, here is the resulting recipe. It is creamy, cheesy and spicy all in one. It goes great with black beans and spanish rice. Take it to work the next day too. All your coworkers will be jealous!
