One of my favorite recipes that my Grandma makes has to be this one. She is famous for her huge breakfasts because our whole family would always stay over during the holidays and wake up hungry. Even though we were a large group, Grandma always seemed to make enough food to feed an army instead. This casserole seems pretty simple to make, but it encompasses every breakfast flavor there is. Try it out and see if your family raves about it as much as ours does.

My Step-Mom, Cora, makes the best Arroz con pollo around…. unfortunately she won't give me the recipe! So I made my own, and tried to make it as similar as possible. Arroz con Pollo is a great meal to make when you have a large group to feed as it is really simple to make. Throw in some vegetables or seasonings that you like, or just make it as is. It will surely become one of your favorites too!

This is a version of my Great Aunt Cindi's recipe. I love beef potpie, but don't always have the time to make it. This quick casserole has all the same flavors but is super easy to prepare. I love this recipe because it can be served in so many different ways. Keep it in its original form, and serve it over some leafy greens with a lemon vinaigrette. This is one of my all-time favorite meals! I remember the first time my Aunt Lisa brought it to a family birthday party...I was about eight years old, and I thought it was the most delicious thing I had ever tasted. Since then, it has become a family staple. My mom and I have both made it countless times. It is the perfect side dish to take to a picnic or barbeque, but it's also hearty enough to stand on its own. My boyfriend would eat this everyday if I would let him. It doesn't take much time and makes a ton, so it is great for leftovers as well. I use fresh broccoli but you could use frozen broccoli to save time. This will definitely become one of your famiy's favorites. Even kids will love it.
