I never understood egg salad sandwiches until recently. For some reason they never appealed to me until I decided to try one at my favorite sandwich shop. Wow, was I surprised at how good it was! I immediately came home and started working on my own quick recipe. You can add pretty much anything you want: pickles, relish, or celery, but I prefer to keep mine simple. Try it out sometime if you are skeptical, like I was. I promise you will become a fan!

I love chicken sandwiches, especially spicy ones! This is a simple recipe that you can make when you want something a little more exciting than the everyday sandwich. Spicy chipotle mayonnaise gives it some kick, while the avocado adds some creaminess. You could even make the chicken by itself and serve with some rice and veggies, instead of making a sandwich. Pulled Pork Sandwiches are one of my favorite things to order at a barbecue restaurant. The moist pork mixes with the tangy barbecue sauce to create a taste combination to die for. I wanted to know how to duplicate that taste at home. What I found out is that the secret behind great, moist, pork is to cook it at a low temperature for a long time. One of my friends found this awesome recipe on one of her favorite blogs (Pots and Pins, if you want to check it out), and passed it on to me. This pulled pork rivals some of the best restaurants out there! Pop the ingredients in the crock pot, go about your business, and before you know it you have a delicious meal.

These simple wraps are a perfect change of pace from the normal sandwich. Creamy Thousand Island dressing and Gruyere cheese give it the Reuben flavor but since it is made with turkey, it is much healthier. Try it with some baked potato chips or a side salad, and you have a quick meal that is great tasting and great for you!

Pitas are a fun way to make sandwiches. You can fill them with pretty much anything and you have a tasty meal in minutes. This spicy chicken pita recipe is great for weekday lunches because it is portable and all you need to do is pop it in the microwave for a few seconds. Yum!
