I love to order Caesar salad when I go out to dinner, but I never was able to duplicate that wonderful taste at home. Bottled Caesar dressings never seemed to satisfy, and boxed croûtons never had the same flavor or crunch. Finally, one day I came across this recipe in my Mother's recipe box. It is simple enough that anyone can make it, but tastes just as good as the ones you get at an Italian restaurant. Serve it as a starter, a side dish, or even top it with some grilled chicken or shrimp and serve as a meal. I think Caesar Cardini, himself (inventor of Caesar salad...not Julius Caesar, as some people like to think) would approve! |

If you love thick potato chowder that is chock full of corn and ham, then this is the recipe for you. Perfect for a cold winter’s day, all you need to make this meal complete is some fresh, hot rolls and perhaps a fruit salad. When you can make something this delicious so quickly, you will never have to worry about what to serve for supper on a blustery evening again. |

I love fresh salads, but I love salads that include fresh fruit even more. Crisp pears give this salad a fresh taste and crunchy texture. You can whip this salad up in a flash for a simple side dish, or even pair it with some soup and you have an entire meal. Homemade red wine vinaigrette tops this delicious salad off. Yum! |

This a good soup for the winter time.
I learned to make this soup while learning to cook at my home town restaurant. |

This tortellini salad is great for an outdoor picnic or a light lunch indoors as well. The tangy dressing really gives it some kick, while the prosciutto adds some saltiness. Creamy ricotta tops it off and makes this a delightful salad that is quick and ready to eat in about 30 minutes! |

This recipe comes from my Mother's Aunt Barbara. Waldorf salad is such a simple recipe, but it has always been a favorite in my family. Whip this salad up when you have company coming over and it will be sure to please. |

This wedge salad is crisp and refreshing. The green apples gives some tartness, the bacon adds the salt, and the blue cheese adds some bite. The creamy garlic dressing is easy to make and really ties everything together. This salad can be a meal in itself, or can accompany any main dish. Yummy! |

I absolutely love wilted spinach salad. I guess it helps that bacon is one of my favorite foods ever (except for when I occasionally watch Charlotte's Web with my kids and feel guilty). Anyways, this salad goes well with almost any main course, or you could just eat it alone for lunch or dinner. Sure the bacon isn't great for you, but go ahead and indulge every once in a while (I won't tell Wilbur). |

This is the time of year when you start looking for ways to use the over-abundance of zucchini that comes your way. I don’t know how it is that just a couple of zucchini plants can produce so many zucchinis, but mine always do! This year I decided to “outsmart” the zucchini and not plant any, and wouldn’t you know that my well-meaning neighbor saw I didn’t have any and kept sharing his! Anyway, I love zucchini, but let’s face it, you can only eat or give away so much zucchini bread before you just can’t stand anymore! And, in these tough economic times, you really hate to waste anything right? So what to do with all that darn zucchini? I recently found this delicious zucchini soup recipe in a cookbook I found at an antique store and think it’s terrific…I hope you do too. |
