Tortellini is great pasta to use for weeknight meals. It is super fast to make and can be paired with a number of sauces, vegetables, and proteins. I happen to love mushrooms, so this is one of my favorite ways to prepare tortellini. Serve this simple recipe with a fresh salad and some crusty bread. Yum!
