Louisiana Red Beans and Rice
Description
Husband is from a small quaint town in Louisiana, the seafood is great and this dish is a staple of all the community. The trick is to cook "clean food", thus no weight gain and a continued long life.

1 pkg red beans
2 cans of Italian tomatoes
1pkg Hilshire Smoked Sausage
salt (not too much)
lemmon and pepper seasoning
oinion flakes (not too much)
a dash of garlic powder
Preparation
Place whole package of beans in your favourite large pot. Cover with cold water and soak overnight. In the morning drain the water from the beans, drain using a collander so as not to lose the beans, recover the beans with fresh cold water and place upon burner to cook, cook on medium heat, it helps to slant the lid on the pot. Cook and stir frequently. When the beans begin to soften then add the two cans of tomatoes, all the seasoning, cook for a little longer and then slice evenly the sausage and add this to your pot, continue cooking until it smells really good and the beans are edible and soft, you will know when this is done. Place two cups of rice, either brown or white as preferred into a microwave safe dish. Add appropriate water and cook in microwave until done. Stir rice after cooking and voila your dish is now ready. Enjoy!

OOH this looks wonderful. Lately, I have been on a sausage kick (my husband no longer eats meat), and I am craving it. I shall make your recipe and pick out the sausage from his bowl. Don't tell!
