Marmalade Croissant Souffle
Description
This is the hands down favorite breakfast at Moss Mountain Inn. Easy, tasty but an impressive brunch offering served with bacon for a sweet/salty combo and tart juice like cranberry or pomegranate.

6 CROISSANTS
1/2 cup Orange marmalade
5 eggs
1/2 teas almond extract
1 cup half and half
1/2 cup orange juice (divided use)
1 tbls. Powdered sugar for garnish
Preparation
Coat a large baking pan with non-stick spray or oil. Slice croissants in half lengthwise and set aside. Thin the marmalade with a tablespoon of the orange juice and spread a thin layer on bottom half of each croissant. Close the croissants back to normal and place in a single layer in pan. Wisk together eggs, half & half, the rest of the orange juice and almond extract, and pour over croissants. Wrap the pan with foil or plastic and place in refrigerator overnight. In the morning, remove from refrigerator for 15 minutes, then bake in a 350F oven for 30-35 minutes, checking to make sure the egg mixture is set but the croissants do not over-brown. Sprinkle with powdered sugar before serving.
