Hubby and I both love Mashed Potatoes but we don't buy those ready packs from the store. We always want to be in control of the food we eat. One thing we both avoid in food is too much salt. We checked the salt contents of each package and we just could not believe how much salt the manufacturers put in it. I tried a package and it's unbelievable how great the taste was, especially when the food is still hot. But try when it's a little bit cold, you will realize the salinity of it. I made a comment one time to my dearest bana that I felt like I was eating sea water. I just can't handle too much salt. So the solution was to create my own mashed potato recipe and it's just so amazing how good it turned out to be. Hubby said that I make the best mashed potato. I know it because I choose the ingredients and the amount of everything in it.
6 large Red potatoes peeled (leave some clean skin to give color) and diced
7 cloves freshly minced garlic
1 tsp dried chives
1 tsp dried parsley
1 tsp dried cilantro
1 cup water
2 tbsp organic unsalted butter
1/2 cup sour cream
3 tbsp non fat milk
salt (optional)
* Put the first 5 ingredients in a pan big enough to allow you to stir and mash.
* Add water and cook until potatoes are cooked. (Do not over cook and if possible let the water stay until it disappears in order to preserve the nutrients.)
* On the same pan, add butter and let it melt for a minute or two.
* Then start mashing with the potato masher.
* Mix the last 3 ingredients
* Mash and mix again until everything is thoroughly blended.
