This is an old family recipe that is simple and delicious. I like to top mine off with gravy, but you can serve it plain, or add good ol' ketchup if you like. Serve it with mashed potatoes and a veggie and you have a filling meal that everyone will love. The next day make cold meat loaf sandwiches with the leftovers. Mmm, my favorite!
2 lbs ground beef
1 tbsp. onion powder, or to taste
1 tbsp. garlic powder, or to taste
1 tbsp. black ground pepper, or to taste
1/3 cup ketchup
1 egg
1 sleeve Ritz crackers, crushed
Mix together all the ingredients listed above. If you do not like to get your hands all full of meat, stick your ingredients into a large Zip lock bag, close, and mix that way. Now form your loaves. You can do the same thing by taking a small amount out and putting into a separate bag. I like to make three smaller loaves. Cover with foil and bake in oven at 350 degrees until done (approx. 45-60 minutes). Take the foil off the last 10-15 minutes to brown.
Serve with packaged brown gravy (or make your own by browning 2 tablespoons of real butter in a pan, add 2 tablespoons of flour, mix and cook a few minutes, then add 1 cup beef stock (I use 1 beef bullion cube in 1 cup boiling water, instead). This won't be as dark as the packaged gravy but it sure is tasty. Even my toddler loves it!
