Mediterranean Linguine with Basil & Tomaotes

Lots of basil and tomatoe flavor for a pasta dish

1 16oz Box Linguine pasta
1 TS salt
1/2 cup Olive Oil
2 pints grape tomatoes
1 TS minced garlic
2 TS balsamic vinegar
1 ts Red Pepper Flakes
18 basi leaves cut into thin strips
3/4 cup parmesan cheese
Preparation
Heat 6 quarts water to boiling. Add pasta and salt cook until aldente. Heat olive oil in large skillet on medium heat. Add tomatoes and garlic. Cook and stir for two minutes or until tomatoes are soft. Remove from heat, stri in vinegar and pepper flakes. Drain pasta and add to skillet. Cook until pasta is well coated and hot. Remove from heat and salt and pepper to taste. Stir in basil and cheese. This is a great recipe for times when local grown tomatoes are not available. Grape tomatoes are very tasty. Serve with additional cheese if desired. HINT: NEVER add salt until water boils, it can damage non-stick surfaces if added before water boils. It can even damage aluminum pasta cookers.
