Mimi's Pork Chop Casserole

I grew up thinking this was some sort of "fancy dish" because it does look really pretty and TASTES GREAT!

1 c. Rice
6 Pork Chops (any style/cut)
2 Bell Peppers, sliced into rings
2 tomatoes, sliced
1-2 Onions, sliced into rings
2 cans Beef Consumme
Preparation
Place rice (uncooked) in bottom of 10x13 baking dish. Place pork chops on top of rice. Top each pork chop with a slice each of onion, tomato, bell pepper rings. Pour beef consumme over everything.l Sprinkle with salt and pepper to taste. Cover with foil. Bake 2 hours at 300 degrees F. (This makes a wonderful dish, very moist and tasty. Even though the "cook time" is long -- I think it should still quality as FAST because of the ease of preparation!)
