Mimi's Sloppy Joes

A friend of mine gave me the original recipe for this a few years ago and they were the best sloppy joes I have ever had. I have adapted the recipe a bit over time, but they are still as delicious as when I first tried them. My family is so crazy about them that my son, who is grown and on his own, asks me to make and freeze them for him to take home on his next visit.

1 1/2 pounds lean ground beef
1 cup chopped onion
1/2 cup chopped green pepper
1 8 oz. can tomato sauce
1 cup ketchup
1 Tablespoon brown sugar
1 1/2 tablespoons lemon juice or white vinegar
1 1/2 tablespoons yellow mustard
1 1/2 teaspoons worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon black pepper

Preparation

Brown beef in large skillet; drain.

Put beef back in skillet; add peppers and onions and cook until vegetables are soft. In a small bowl, combine remaining ingredients; add to beef and stir. Cook over medium heat, stirring occasionally for about 10 minutes.

Serve on toasted buns. You can substitute 1/2 cup frozen onion and green peppers for the fresh onions and peppers in this recipe. For low-sodium and diabetic diets, use low or reduced sodium tomato sauce and spoon-able brown sugar substitute (diabetics should reduce ketchup as well). For an even healthier alternative, try making these with ground turkey…your family will never know it’s good for them!
