Mini Chicken Pot Pies
Description
Potpie is a simple dish that get kids to actually eat their vegetables. Something about the pie crust and creamy sauce just seems to make them forget the veggies are even there. One way to make potpie more fun for kids is to make them individual sized pies. Let your kids help prepare their pies and they will enjoy them even more. This is a super quick meal that is healthy too, and your kids will love it!

1 package of flaky biscuits
1-2 cooked chicken breasts, cubed
2 cans of mixed vegetables ( I use corn, potato, peas, green bean, and carrot mix)
1 can of cream of chicken soup
1/3 cup milk
1 tablespoon butter, melted
Salt and pepper
Italian seasoning
Preparation
Preheat your oven to 375 degrees. Take each biscuit and halve them. Grease a muffin tin, or individual ramekins, and place one half of each biscuit down into the cups. Have the kid press down on the sides and bottom to make sure the cup is fully covered. In a large bowl, add vegetable mix, chicken, soup, milk, seasoning, and salt and pepper. Have the kids stir the ingredients together until fully combined. Now have them take a couple of spoonfuls of the mix and place it into their biscuit cup. Next they need to take the other half of the biscuit and place it over the top, pressing the sides down to seal them. Have them brush the top of each pie with melted butter. Place into the oven and cook for about 15-20 minutes. They will be golden brown when finished. Remove from the heat and let them sit for a few minutes. To remove them from the container, run a butter knife carefully around the edge. Now you are ready to serve. Let the fun begin!
