Mini Pizza Bites
Description
A quick snack for kids after school or a good appetizer for any party. Everyone will love it!

1/2 cup Chopped Pepperoni
3/4 cup flour
1 tsp baking powder
1 tblsp dried oregano
3/4 cup Milk (I used almond milk)
1 egg (lightly beaten)
1/2 cup Mozzarella Cheese Shredded
1/4 cup Chopped Red Peppers (you can use as much as you like)
1/4 cup Chopped Mushrooms (you can use as much as you like)
1 can Favourite Pizza Sauce
Preparation
In a large bowl mix together flour, baking powder and oregano, whisk in milk and egg. Stir in cheese and pepperoni. Let stand.
Pre-heat oven at 375 degrees.
In a skillet saute peppers and mushrooms for about 2 to 5 minutes. Then stir in batter.
Divide batter among 24 cup mini muffin tray. Depending how big you want them makes 20 to 24.
Bake for 25 minutes or until golden brown. Heat pizza ssauce and serve warm.

yum! love anything to do with pizza so this one looks like one i will definitely try. will let you know how it turns out.
if i wanted to make this for people who don't like mushrooms (which i know a few), could you suggest a good alternative for the mushrooms in this recipe or could i just leave them out?
