Mozzarella in a Carriage

Try this basic fried mozarella i learned from watching Mario Batali.
A good pair for pasta or can be eaten alone with some marinara dip
or any tomato sauce dip of your choice....

Preparation

* Top the 4 slices of bread with mozzarella slices. Cover with the 4 remaining slices of bread to make a sandwich. Cut the bread diagonally in half, and leave at least a quarter inch of the permiter of the cheese inside the sandwich. Set aside.

* In a wide shallow bowl, whisk the egg, milk, thyme, salt and pepper. Dip both sides of each bread on the egg mixture then set aside.

* In a non stick pan, heat a tsp or tbsp of olive oil, then add a little bit of butter. Place the sandwiches in the pan, and cook the first side for 2 minutes or until golden brown, then flip to the other sides, then cook for another 2 minutes. Repeat the process on the remaining bread, oil, and butter. Sprinkle with parmesan on top. Serve while the cheese is melting and gooey....

Servings: Makes 8 diagonal sandwiches
