Muffin Tin Crab Cakes
Description
A better for you crab cake that is baked and uses whole wheat bread crumbs. Best serves with coleslaw and tartar sauce.

1 pound crab meat
2 cups fresh whole wheat breadcrumbs
1/2 red bell pepper, minced
3 scallions-sliced
1/4 cup Mayonnaise
2 large eggs
1 egg white
10 dashes tabasco sauce
1/2 teaspoon celery salt
1/4 teaspoon Black Pepper
lemon wedges for garnish
Preparation
Preheat oven to 450°F. Generously coat a 12-cup nonstick muffin pan with cooking spray.
Mix crab, breadcrumbs, bell pepper, scallions, mayonnaise, eggs, egg white, hot sauce, celery salt and pepper in a large bowl until well combined. Divide mixture evenly among muffin cups. Bake until crispy and cooked through, 20 to 25 minutes. Serve with lemon wedges
