Mustard Potato Salad
Description
Potato salad is as American as apple pie, and is a staple for picnics and other outdoor gatherings. I have never been a huge fan of the thick mayonnaise kind, but I actually like this version with mustard. It still has mayo, but the mustard cuts through and gives it some tang. Try this simple recipe whenever you are having your next get together, it is quick, easy and delicious.

6 medium red potatoes, boiled until tender
½ large sweet onion, diced
2 large stalks of celery, diced
4 hard boiled eggs, chopped
1 teaspoon celery salt
¼ cup sweet relish
1 teaspoon salt
½ teaspoon pepper
½ cup mayonnaise
¼ cup mustard
1 tablespoon pickle juice
Chopped fresh parsley
Sweet paprika
Preparation
Cut cooked potatoes into cubes. Place in a large bowl and add onion, celery, eggs, celery seed, relish, salt and pepper. Stir well.
In a separate bowl, combine mustard, pickle juice, and mayo. Stir well. Add to potato mixture and mix until fully coated. Sprinkle with paprika and parsley. Refrigerate before serving. Yummy!
