Nellie's Chicken with Honey -Chilli sauce
Description
This easy to prepare meal can be enjoyed by young and old and is great for a party or buffet spread. For young children, you may refrain from adding the chilly sauce as the dish is just as delicious without it.

500 gm skinless, boneless chicken pieces
1 cup plain floor for making the batter
half tsp baking powder
2 egg whites
A little cold water to make the batter
half cup honey
2 cups corn flour for dusting chicken
Pinch of Salt And Pepper
3 tsp chilly sauce
A stalk of spring onion to garnish
A small chilly ( slice to add to garnish)
Preparation
1.Cut chicken into size of big nuggets. Add a pinch of salt and sprinkle pepper, rub on the chicken and leave to marinate 8 minutes.
2. Slice chilly and cut spring onions - then put aside to use for garnish before serving.
3.Prepare the batter : Mix plain flour, baking powder, beaten egg white and cold water.
4. Pour cornflour into a plastic bag or large bowl and toss the chicken pieces into the cornflour until all the chicken pieces are evenly coated with cornflour.
5. Heat cooking oil in a fryer or pot.
6. Dip the coated chicken pieces into the batter, one piece at a time, then into the heated oil. Deep fry chicken pieces for 2 minutes or until surface turns crisp and golden.
7. Pour honey and chilly sauce into a microwavable bowl and heat
the sauce mixture. Pour over chicken and serve immediately.
Garnish with sliced chilly and spring onions.
