4 ounces unsalted butter, soft 1 1/2 cups white sugar 3/4 cup brown sugar 3 each whole eggs, at room temperature 1 teaspoon vanilla extract 4 1/2 cups rolled oats 1 1/2 cup unbleached all-purpose flour 1 teaspoon baking soda 3/4 teaspoon kosher salt 1 1/2 teaspoons ground cinnamon 1/4 teaspoon ground nutmeg 1 1/2 cups dried cranberries (or raisins) 1 cup walnuts, toasted and coarsely chopped 1/2 cup shredded coconut
Preparation
Cream butter and sugars on high speed until light and fluffy.
Scrape bowl and beater and gradually add eggs and vanilla, beating well after each addition until mixture is velvety.
In a separate bowl, combine oats, flour, soda, salt, and spices.
Stir in dry ingredients until just combined. You may wish to do the last couple of stirs by hand to avoid overmixing.
Fold in craisins, walnuts and coconut.
Chill dough at least 1 hour before baking.
Drop or roll into spheres and bake at 350ºF (325ºF in convection ovens) until edges are golden.
