Oatmeal Griddlecakes

These are pancakes with a little texture, and without that wheat pancake leaden aftereffect. The oatmeal highlights the natural sourness of buttermilk, and sets up your palate for the collision with melted butter and maple syrup. A most definite yum...
add to shopping list Ingredients
1 1/2 C oatmeal
2 C buttermilk
1/2 C flour
1 tsp Sugar
1 tsp baking soda
1 tsp salt
2 eggs, beaten
Preparation
Mix together the oatmeal and buttermilk and let sit for 15 minutes to soften the oatmeal. Then stir in the remaining ingredients. Bake on hot griddle.
