My Great Grandmother, Lucille, used to make these muffins. They are perfect to accompany any breakfast dish, or just eat them by themselves if you don't have much time in the morning. Refreshing citrus flavor makes these a hit at any brunch!
3 tablespoons butter (melted)
½ cup light brown sugar
2 eggs
2 cups flour
1 large orange, juice and rind
1 cup milk
4 teaspoon baking powder
Stir flour, baking powder, sugar and salt in a large bowl. Blend in melted butter. Add in eggs and milk, stir well. Next add your orange juice and rind, mix until combined and smooth consistency. Preheat your oven 350 degrees. Pour the batter into pre-greased muffin tins. Bake for about 20 minutes. Remove from the oven and allow to cool. At the last minute, you can place a sliced orange piece on the top of each muffin and dust with sugar. Beautiful and tasty!
My husband has baked these twice and it reminds me of recipes from his grandmother--"some salt". It would be good to have the salt listed in the ingredients: probably 1t.?. I am wondering about 4t of baking powder. Years ago they didn't have double acting baking powder. The muffins had strange shaped crowns. They are very good. The orange slice on top really adds to the flavor! Thanks. Amelia
