Oven Baked Sweet Potato Fries
Description
French fries are a common side dish to go with many American meals, but did you ever try sweet potato fries instead? Well if you haven’t, you are missing out! This simple recipe is easy to prepare and jazzes up the regular burger and fries combo. Plus, these are also healthier than regular fries because sweet potatoes contain vitamins A and C, which are both antioxidants. So the next time you are looking for a delicious addition to your quick meal, throw these babies in the oven and let them work their magic.

1 ½ pound sweet potatoes
¼ cup olive oil
½ teaspoon salt
½ teaspoon paprika
¼ teaspoon cinnamon
Preparation
Preheat you oven to 425 degrees. Line a baking sheet with foil. Wash and peel your sweet potatoes, and cut into ½ inch wide strips. Place the potatoes in a plastic bag and add your oil, salt, pepper, cinnamon and paprika. Mix well until coated. Place onto the baking sheet and spread evenly. Place into the oven and cook for about 30 minutes. Turn them every ten minutes to ensure even cooking. Once cooked, blot with a paper towel and serve warm.

This is a great recipe. You feel like you are getting french fries while still being good. If you are in a real hurry you can even find them in the frozen food section ready to go.
I love these. If you do them & burgers in the oven at the same time you have a whole meal. I posted how to do this at http://heidicookssupper.blogspot.com/2009/08/easy-hamburgers-sweet-potato-oven-fries.html
I made these for my fiance and he LOVED them! I added some brown sugar to the bag and also put them under the broiler for a few minutes at the end to make them more crispy.
Served them with a horseradish mayonaise.. so delicious!
