Oven Roasted fish with Toatoes, Onions and Plaintain

This is a tasty and healthy dinner.

add to shopping list Ingredients

1/2 cup dry white wine
2 1/2 tablespoons Paprika
2 tablespoons salt
1 tablespoon Black Pepper
2 tablespoons Onion Powder
2 tablespoons garlic, chopped
1 tablespoons Cayenne Pepper
3 whole or fillet fish, trout, snapper or markerel
4 large tomatoes, chopped
1 large sweet onion, julienned
2 tablespoons cilentro, chopped
8 Thin slices lemon
3 tablespoons butter
2 Plaintains

Preparation

1. Preheat the oven to 400 degrees F and line baking sheet whith foil paper.
2. Combine first seven ingredients in a mediun bowl to make a marinade.
3. Arrange cleaned fish on the baking sheet, follwed by the tomato, onion, and cilentro, drizzle marinade and then lemon slices and butter.
4. Bake for 20 to 25 minutes or until fish flakes off.
5. While fish is in the oven cut plaitain in half then slice the halfs in the middle.
6. Cover with water in medium sauce pan and boil for 25-30 minute or until fork runs throught it.
