Pancake Cobbler
Description
This is a favorite of our guests at Moss Mountain Inn. It's easy, different, delightful and seasonally adaptable- the perfect B&B recipe.

1.5 tbls butter
1/4 cup Evaporated Cane Juice (sugar)
2 cups Fresh or frozen fruit (berries, peaches, bananas, etc.)
2 cups Buttermilk pancake mix
1 teas vanilla extract
1/2 cup cream cheese
1/4 cup Maple Syrup
Preparation
Preheat oven to 350F. Butter bottoms of 4 ramekins and coat with sugar. Fill ramekins with fruit. Prepare buttermilk pancake mix according to package directions and include vanilla. Spoon pancake batter over fruit. Bake for 25-30 minutes until pancake mix is slightly browned.
Meanwhile in a small mixing bowl, cream cheese with a mixer until smooth. Add maple syrup gradually. Refrigerate while cobblers are baking to harden. Spoon cheese/syrup mixture over cobblers before serving.
NOTE: Any fresh or frozen fruit can be used in this recipe so long as it is uniformly chopped, preferably in 1/4 inch pieces.
