Pancakes with Caramelized Peaches
Description
Most of the week I eat a quick breakfasts, just a toast witch cream cheese or a vegetarian sausage link, but not on Sundays . Sunday is a special day when you don’t have to feel bad about staying in bed till noon (except the fact that your dogs have been begging you for the past hour to take them on a walk) and eating breakfast in pajama. You walk into the kitchen and start mixing flour and eggs. And when you make pancakes the smell is just fantastic. Every morning should smell like that.
Breakfast like this is a little bit heavy with a lot of sugar and butter but trust me, it’s worth it. I’ll eat less for dinner. Besides everyone should be allowed to indulge himself at least once a week.

1 cup all purpose flour
2 Tbsp flax seed meal
1 cup milk
1 egg
2 tsp baking powder
1 Tbsp Sugar
2 Tbsp melted butter
Pinch of Salt
1 peach
1 Tbsp Brown Sugar
1 Tbsp butter
Preparation
Start with the pancakes. In a bowl combine flour, flaxseed meal, sugar, baking powder, salt, milk, egg and butter and whisk until combined.
Spray skillet with a cooking spray and heat to a medium temperature, not to hot because it will burn pancakes but not too cold because they’ll take too long to brown.
Using scoop pour small round portions of batter on a skillet. When starts bubbling turn over with a spatula and wait until bottom gets nicely brown. Set aside and continue with the rest of the batter.
For the caramelized peaches melt the batter in another skillet. Add 1 Tbsp brown sugar and wait for it to caramelize a bit. Cut peaches into wedges, add to the skillet and fry about 2 min per side. Stack up you pancakes and serve peaches on a top.
