Description

Whenever I make this recipe, it reminds me of my grandmother. She would make this every saturday along with Scalloped Potatoes, Baked Ham and Homemade Brownbread. Ummmmmmmm! The memories!

Preparation

Soak the beans overnight covered with water. Drain, add more water to cover the beans, bring to a boil, turn down the heat to a simmer until the beans soften scimming off any foam as they cook. Drain half the water, add the listed ingredients in the order given. Stir everything well together. Top with boiling water just to cover the beans. Put in a preheated 250 degree oven for about 7 hours. Stirring every hour. For the first 5 hours, leave cover on. Take cover off for the remaining 2 hours so some of the liquids can evaporate and thicken, stirring more often as it gets thicker. If you need more time for the thickening to happen, give them more time to bake. Serve with Scalloped potatoes, baked ham and homemade brown bread. Enjoy!
