Penne with broccoli, garlic, and pine nuts
Description
The title of this dish may be long but it is extremely quick and easy to make. It is a healthy dish that even your kids will love. You can also add grilled chicken.

3/4 lb Penne pasta, cooked
1/8 Cup extra virgin olive oil
1 red onion, sliced
3 garlic cloves, crushed
10oz box of frozen broccoli
1 1/2 tsp dried basil
1/3 Cup pine nuts, toasted
parmesan cheese
salt and pepper, to taste
Preparation
Heat a a small, dry pan on high. Add pine nuts and toast for about 2 minutes, until barely turning brown.
Shake pan frequently.
In a large pan heat olive oil over medium high heat. Add the onions and saute until translucent. Add garlic to onions and mix. Add broccoli and basil.
Turn heat down to a simmer. Cover pan for about 10 minutes.
Add penne to broccoli and cook for another minute. Add salt and pepper, to taste.
Remove from heat. Add pine nuts and sprinkle with parmesan cheese.

broccoli is really good for you! Out of all vegetables for your health, it's the one to eat.
Theresa, if you use fresh broccoli be sure to add some additional liquid such as stock so it isn't dry.
