Extremely easy and delicious chicken dinner. A family favorite for sure!!
3-4 Chicken Breasts (Skinless,Boneless)
1/4Cup Unbleached Flour
1/2Tbsp Mrs. Dash Table Blend
1Can Dole Pineapple Chunks
1/2Cup Pineapple Juice (from pineapple can)
3Tbsp Low Sodium Soya Sauce
1Tsp White Vinegar
1Tbsp Coconut Oil
1 1/2Cups White Jasmine Rice
2Cup Steamed Veggies
Cut chicken into bite sized cubes.
Heat wok/pan, add oil.
In a mixing bowl, add flour, seasoning and coat chicken evenly with flour mixture.
Add even coated chicken to heated pan.
Start the rice in a rice cooker and steam those veggies!
Add canned pineapple (minus the juices) and cook for 3-5 mins.
In a new mixing bowl, add pineapple juice, soya sauce, vinegar, cornstarch and I always add a tsp of fresh minced garlic.
Add the new mixture into the pan on a low-med temp. It will thicken quickly so stir as you add.
Once it's all added and the sauce is at your desired consistency, serve with rice and veggies!! Enjoy!!
