Pineapple Pancakes
Description
A new take on an old favourite of mine (Pineapple upside down cake),
Great for lazy sunday morning breakfast or as a sweet treat anytime :)

115g flour
2 large eggs
100ml milk
2tablespoons icing sugar
1 teaspoon baking powder
1 can pineapple rings
a little oil for brushing the pan
Preparation
Preheat a large fry pan/skillet on a med heat.
In a large mixing bowl mix together the flour, baking powder and eggs, adding the milk till you get a smooth batter, then whisk in the icing sugar.
Brush the pan with a little of the oil then place the pineapple rings in the pan and cook untill slightly caramalised, then turn the pineapple over and spoon some of the batter onto each pineapple rings. cook untill bubbles break the surface of the pankcake then turn, cook for about one minute each side.
serve pineapple side up on warmed plates, with a dollop of whipped cream or dust with icing sugar. Enjoy.
